Cooking for a diabetic can be confusing. Each individual is different and has different blood sugar reactions to various foods. I really expected quite some little bit of information regarding "How", so I was a bit surprised when I opened Elizabeth Charles How to Cook For a Diabetic - Incredible Appetizer Recipes For Diabetics to find only a two page introduction. While Elizabeth does mention the American Diabetes Association (without providing a link to the specific information she provides) she does not quote their extremely helpful guidelines. Here's one example:ELIZABETH: Fats are an essential part of everyone's diet. The diabetic should consume between 25 and 35 percent of their daily calories with fats.
ADA: Choose liquid oils for cooking instead of solid fats that can be high in saturated and trans fats. Remember that fats are high in calories. If you're trying to lose weight, watch your portion sizes of added fats.
I was even more surprised at the choice of recipes, which tend mostly to varieties of hummus, various dips and ceviche not much different - or even any different - than you would find in many other cookbooks not aimed at the diabetic. A recipe for Fruit Leather containing 8 cups of fruit also contains an entire cup of granulated sugar, another recipe calls for canned peaches without specifying that they should be of the sort packed in a low-sugar syrup. Probably the most surprising, though, was a recipe for Mango Mania Salsa, which calls for 12 mangoes, an amount similar to that which I use for a Mango Chutney recipe that makes 5 pints of chutney. Fresh salsa does not keep its goodness for more than 2 or 3 days. Even large families might find this 24 serving recipe more suitable for a neighborhood barbecue.
I checked every page twice - once in my iPad Kindle app, a second time in the Cloud Reader to be absolutely positive I didn't miss the recommendation Elizabeth should have made to consult a nutritionist, standard advice to any diabetic, nor did I miss the link Elizabeth didn't provide to the American Diabetes Association web site where further nutritional information is provided. Most especially, though, I did not accidentally overlook the links Elizabeth failed to provide to the special section of Diabetes Recipes at Allrecipes, where each and every one of the recipes in this book came from. You'll find many more appetizers as well as recipes in many other categories specifically aimed at the diabetic patient from the category menu in the left-hand margin. Yes, that Mango Mania Salsa recipe makes 24 servings at Allrecipes too!
The book does have an interactive Table of Contents, but Elizabeth hasn't taken the time to connect it to the Kindle Navigation Menu. No stars from Grandma.

As a diabetic I am often dissappointed with the new recipes that are introduced for diabetics, however this kindle book was a pleasant surprise!
The book contains many quick easy to create recipes, that are tasty and creative.

Never received the book
This book promotes the American Diabetes Association as a good source for accurate information on diabetes. Wrong. The ADA says fasting glucose can range from 70 to 130 while the medical community has said for the last 10 years that AM fasting glucose should not be above 100.
ADA says 45-60 CHO per meal is desirable and for the last 100 years, low carb diets of 15-20 per meal have been the most successful in managing diabetes and helping diabetics to get off diabetes medicine.
The diabetic complications are NOT a guarantee unless the blood sugars are NOT kept under good control. If they are in good control, then heart disease, diabetic neuropathy, kidney disease, retinopathy are NOT a guaranteed outcome for a well controlled diabetic.
But when you listen to the high carb guidelines of the ADA and follow those and have to stay on diabetic medicines with your blood sugars out of control, you will get the side effects sooner rather than later if at all.
This book starts off incorrect by saying that triglycerides are formed by not eating enough omega-3 fatty acids and that is only partially correct. They are formed by eating too many high sugar carbs like fruit and whole grains made from wheat. Read "Wheat Belly" by Dr. William Davis (available on ) and learn more accurate info about this from a cardiologist. When CHO is more than 60% of calories, BMI is >28% and insulin resistance is high, triglycerides are formed. And taking omega-3 capsules won't reverse that but cutting way back on CHO WILL.
Fiber is important but vegetables have far more fiber (28 to 50%) than either fruits (13-20%) or whole grains (3-8%) without the concomitant starches and sugars. Nuts are also excellent for fibers without sugars and starches. But cereals, rices and pastas have far more starch and other carbs and only about 3-6 % fiber at the most which is a poor trade off. She mentions fruits first and that is not correct.
Forget fruits because sugar is sugar is sugar and there's little to no such thing as a healthy sugar/fruit for a diabetic except low sugar fruits like the berries -- straw, blue, rasp and black. Tart cherries and watermelon also have low sugar per 100 grams of food. Don't think of honey or the new hot sugar these days, agave nectar (it is 55% fructose which is deadly to a diabetic) as good choices. There are NO good choices of sugar, period.
Just as she says to avoid high fructose corn syrup, you should avoid ALL fructose sources especially fruit. That's why it's called "fructose", the simplest of single sugar molecules and very hard on the liver to turn into glucose the sugar our body uses.
A lot of people forget about or don't even realize that the liver is ALSO involved in diabetes and making glucose. This is the biggest reason to forgo the fruit to not tax the liver so much.
Apple cider vinegar, 2 T per day, will help to cleanse the liver and lower blood glucose the same as Metformin. This has been tested and double blind reported in and has been reported in Diabetes Care Journal. .
Hummus recipe has cottage cheese in it that has milk sugar (lactose) and not necessary to make hummus. Bad choice.
Recipes with mangoes, pineapple, dried figs, yogurt, all way too high in sugars. All the recipes with more than 10 CHO grams per serving are too high for an appetizer.What does that leave for the rest of the meal for the diabetic? Little to nothing.
